Start a new tradition
Traditions are a beautiful of celebrating and bringing families and friends together. More often than not, traditions are built around a meal. If your traditional family Easter isn’t so healthy, be the one to start a new tradition by adding a healthy main or side dish to your family meal. This way, you know there will be something healthy to eat and you can share it with others!
Makes four 1/2 cup servings.
Ingredients:
1 large head of cauliflower- chopped
1 tablespoon olive oil
3 garlic cloves, minced or presse
1 leek, trimmed and chopped fine
1 tablespoon nutritional yeast (optional for dairy free version)
1 tablespoon ghee or butter ** (Lee’s Turmeric or Brown Butter are our favs!)
1/2 cup unsweetened almond milk or rice milk
2 tablespoons chopped fresh chives
1 teaspoon chopped fresh thyme
1/2 teaspoon ground sea salt
1/4 teaspoon freshly ground pepper
**Lee’s Ghee available for a limited time at EASTND’s Wellness Boutique, it is clarified butter, has all the buttery taste of butter without the lactose, great alternative for lactose free folks!
Instructions:
Boil the cauliflower in water over medium-high heat for 7-10 minutes or until soft. Rinse and add the cauliflower to a large food processor.
In a medium skillet, heat the olive oil over medium heat. Add the garlic and leeks, and cook for about 3-4 minutes or until the leeks are tender. Remove from heat and add to the food processor.
Then add the nutritional yeast (optional), ghee or butter, almond/rice milk/milk, chives, thyme, salt, and pepper.
Blend until cauliflower is very creamy.
