A Sweet Treat For Easter: Coconut Macaroons

Easter is a sure sign that spring is here and summer is on its way! Easter also represents a time of renewal and rebirth, and for many, with the warmer days, it is a time of renewed inspiration for health and healing.

I remember many Easters spend drawing on sidewalks with chalk and blowing bubbles, all while enjoying chocolate eggs and jelly beans. These days, I’m not so keen on the chocolate eggs and jelly beans. Although they are fun, I don’t like how I feel after having too many before noon, or how kids respond to the sugar and artificial food colouring. Here is a sweet treat you can try to have a happy and healthier Easter!

Total Time: 15m
Yield: 8-12 cookies

Ingredients

•1 cup unsweetened shredded coconut

•1 tbsp almond meal

•1/2 cup + 1 tbsp of coconut milk or rice milk

• pinch of salt

• 3 1/2 tbsp pure maple syrup or honey (Sub with coconut oil to make it Keto friendly)

•1/4 tsp vanilla extract

Optional: for extra protein add protein powder of choice

Instructions

Preheat oven to 350 F. Stir together all ingredients. Heat on the stove until thick enough to scoop balls onto a cookie tray. Bake on the centre rack 15 minutes.

Let cool completely before removing from the tray.

If desired, dip in melted chocolate (Lindt 80% or Camino dairy free chocolate chips are our faves!)
